Air Fried Taco Rice Balls

2 cups cooked rice (choose white or brown)

1 cup cooked ground beef or turkey (seasoned with taco seasoning)

1 cup shredded cheddar cheese

1/2 cup black beans, rinsed and drained

1/2 cup corn (canned, frozen, or freshly cooked)

1 small red onion, finely chopped

1/4 cup fresh cilantro, chopped

1 large egg, beaten

1/2 cup breadcrumbs (Panko preferred for added crunch)

1 tsp garlic powder

1 tsp onion powder

1/2 tsp cumin

Salt and pepper to taste

Cooking spray or olive oil for air frying

Prepare the Mixture: In a large mixing bowl, combine the cooked rice, seasoned ground beef or turkey, shredded cheddar cheese, black beans, corn, finely chopped red onion, and chopped cilantro. Mix thoroughly until all ingredients are well combined.

    Season the Mixture: Add the beaten egg, garlic powder, onion powder, cumin, and a pinch of salt and pepper to the bowl. Stir until the mixture is cohesive and can easily hold together when shaped into balls.

      Form the Balls: With clean hands, scoop out portions of the mixture—about 1.5 inches in diameter—and roll them into tight balls. You should end up with approximately 12-15 rice balls.

        Coat with Breadcrumbs: Roll each rice ball in breadcrumbs until they are fully coated. For an extra crispy bite, you may dip the balls back into the beaten egg and then roll them in breadcrumbs a second time.
