Ingredients

1 sheet of frozen puff pastry (thawed)

1 medium apple (preferably Granny Smith or Honeycrisp), thinly sliced

8 oz Brie cheese, cut into thin slices or small wedges

1/4 cup brown sugar

1 tsp ground cinnamon

1 tbsp lemon juice

1 egg (for egg wash)

1 tbsp water

1/4 cup chopped walnuts (optional)

1 tbsp honey (for drizzling)

Fresh thyme leaves for garnish (optional)

Instructions

Preheat the Oven: Begin by preheating your oven to 400°F (200°C). Prepare a baking sheet by lining it with parchment paper to prevent sticking.

Prepare the Apples: In a medium mixing bowl, combine the thinly sliced apples with brown sugar, ground cinnamon, and lemon juice. Gently toss the mixture until the apple slices are well coated. Let them rest for about 10 minutes to allow the flavors to meld and the apples to release some of their juices.

Roll Out the Puff Pastry: On a lightly floured surface, take the thawed puff pastry and roll it out into a rectangle approximately 1/4 inch thick. Ensure that the surface is evenly floured to prevent sticking.

Create the Braid Pattern: Using a sharp knife or pizza cutter, make diagonal cuts along both long edges of the puff pastry, about 1 inch apart. Be careful to leave the center area uncut. These cuts will create strips that will be folded over the filling to form a braid.

Assemble the Filling: In the uncut center of the pastry, lay down slices of Brie cheese evenly along the length. Spoon the prepared apple mixture over the cheese, making sure to distribute it well. If you’re using walnuts, sprinkle them on top for added texture and flavor.

Braid the Puff Pastry: Starting at one end of the pastry, fold the strips over the filling, alternating sides to create a braid effect. As you fold each strip over, gently press down to seal the edges, ensuring the filling stays intact.

Prepare the Egg Wash: In a small bowl, whisk together the egg and water until well combined to create an egg wash. This will give your pastry a beautiful golden color once baked. Brush the egg wash generously over the top of the braided pastry.

Bake the Pastry: Carefully transfer the braided pastry onto the prepared baking sheet. Place it in the preheated oven and bake for 25-30 minutes, or until the puff pastry is puffed up and golden brown.

Drizzle and Serve: Once baked, remove the pastry from the oven and let it cool for a few minutes. Drizzle warm honey over the top for added sweetness and garnish with fresh thyme leaves if desired. Slice and serve while warm for the best flavor.
