Ingredients

6 cups fresh spinach leaves, thoroughly washed and dried

2 medium apples (preferably Fuji or Honeycrisp), cored and thinly sliced

1 cup dried cranberries

1/2 cup walnuts or pecans, roughly chopped (toasting them enhances flavor)

1/2 cup crumbled feta cheese (optional for additional creaminess)

1/4 red onion, thinly sliced

1/4 cup extra virgin olive oil

2 tablespoons apple cider vinegar

1 tablespoon honey or maple syrup

Salt and freshly ground pepper to taste

Instructions

Prepare the Spinach Base: Begin by placing the fresh spinach leaves in a large salad bowl. This will serve as a crisp and vibrant foundation for your salad.

Slice the Apples: Core and thinly slice the apples. To keep them looking fresh and to prevent browning, you may toss the slices in a drizzle of lemon juice right after cutting.

Add the Crunch: Layer the apple slices evenly on top of the spinach. Next, sprinkle the dried cranberries and the roughly chopped walnuts or pecans, providing delightful textures and flavors.

Slice the Onions: Take the red onion and slice it thinly. Add it to the bowl; the sharpness of the onion will complement the sweetness of the apples and cranberries beautifully.

Feta Cheese: If you choose to include feta, crumble it generously over the salad to introduce a creamy and tangy element that brightens the overall flavor.

Prepare the Dressing: In a small mixing bowl or a jar with a lid, combine the olive oil, apple cider vinegar, honey (or maple syrup), salt, and freshly ground pepper. Whisk or shake well until the dressing is fully blended and emulsified.

Toss and Serve: Just before serving, drizzle the homemade dressing over the salad. Gently toss the ingredients together to ensure every bite is coated in the delicious dressing. Taste and adjust seasonings as desired.

Garnish and Enjoy: Elevate the presentation by sprinkling a few extra nuts or cranberries on top for a visually appealing finish. Serve immediately to enjoy the freshness!
