8 oz fusilli or rotini pasta

2 ripe avocados, diced into bite-sized pieces

1 cup cherry tomatoes, halved

1 cup cucumber, diced into small cubes

1/2 red onion, finely chopped

1/2 cup corn (fresh, frozen, or canned, drained if needed)

1/4 cup fresh cilantro, chopped

1/2 cup ranch dressing

1 tablespoon fresh lime juice

Salt and pepper, to taste

Optional: Crumbled feta cheese for garnish

Cook the Pasta: In a large pot, bring salted water to a boil. Add the fusilli or rotini pasta and cook according to package instructions until al dente (typically 8-10 minutes). Once cooked, drain the pasta in a colander and rinse under cold water to stop the cooking process and cool the pasta down.

    Prep the Vegetables: While the pasta is cooking, prepare the vegetables. Carefully dice the avocados, halve the cherry tomatoes, dice the cucumber into small cubes, and finely chop the red onion and cilantro. Set all prepared vegetables aside.

      Mix the Dressing: In a separate small mixing bowl, combine the ranch dressing with fresh lime juice. Whisk together until smooth and well combined. Season with salt and pepper to taste, adjusting to your preference.
