1 cup sharp cheddar cheese, shredded

1/2 cup mozzarella cheese, shredded (plus extra for topping)

8 large eggs

1 cup whole milk

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon paprika

1/4 teaspoon cayenne pepper (optional for extra heat)

2 tablespoons fresh chives, chopped (for garnish)

Season the mixture with salt, black pepper, paprika, and cayenne pepper if desired.
