1 small red bell pepper, finely diced

1 small green bell pepper, finely diced

1 small jalapeño, seeds removed and finely minced

1/2 cup cooked and crumbled breakfast sausage or bacon (optional)

Fresh chives or parsley, finely chopped (for garnish)

Preheat the Oven: Begin by preheating your oven to 375°F (190°C). Prepare a standard muffin tin by greasing it lightly with cooking spray or lining it with muffin liners, ensuring easy removal of the muffins after baking.

    Prepare the Egg Mixture: In a large mixing bowl, crack the 6 eggs and pour in the 1 cup of milk. Whisk together until the mixture is smooth and thoroughly combined. Set this bowl aside.

      Combine Dry Ingredients: In another bowl, sift together the 1 cup of all-purpose flour, 1 teaspoon of baking powder, 1/2 teaspoon of salt, and 1/2 teaspoon of black pepper. Whisk until the dry ingredients are well mixed and aerated.

        Mix the Vegetable Medley: In a sizable bowl, combine the diced red and green bell peppers, minced jalapeño, and the crumbled sausage or bacon (if using). Stir these ingredients together so that they are evenly distributed.
