2 medium zucchinis

1 cup panko breadcrumbs (for extra crunch)

1/2 cup freshly grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried oregano

1 teaspoon dried basil

1/2 teaspoon fine salt

1/2 teaspoon freshly ground black pepper

2 large eggs

1 tablespoon olive oil

Preheat the oven: Begin by preheating your oven to 425°F (220°C). For a non-stick surface and easy cleanup, line a baking sheet with parchment paper.

    Prepare the zucchinis: Rinse the zucchinis under cool water and pat them dry with a towel. Cut off both ends, and slice each zucchini lengthwise into fries about 1/4 to 1/2 inch thick.

      Set up the breading station: In a medium bowl, whisk together the eggs and olive oil until well combined. In a separate bowl, mix the panko breadcrumbs, Parmesan cheese, garlic powder, onion powder, oregano, basil, salt, and black pepper, ensuring an even distribution of herbs and spices.
