Balsamic Strawberry Crostini

1 French baguette, sliced into 1/2-inch thick rounds

1 cup fresh strawberries, hulled and thinly sliced

1/4 cup balsamic vinegar

2 tablespoons honey

1/2 cup fresh basil leaves, finely chopped (plus extra for garnish)

8 oz goat cheese, softened to room temperature

2 tablespoons extra-virgin olive oil

Salt and freshly ground black pepper to taste

Prepare the Balsamic Reduction: In a small saucepan, mix together the balsamic vinegar and honey. Heat this mixture over medium heat until it begins to simmer gently. Once it starts simmering, reduce the heat to low, allowing it to simmer for 10-15 minutes. Watch closely as it thickens to a syrupy consistency that coats the back of a spoon. Once done, remove from heat and let it cool completely.

    Toast the Baguette Slices: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper. Arrange the sliced baguette rounds on the sheet and brush both sides lightly with extra-virgin olive oil. Place in the oven and toast for about 5-7 minutes, or until they turn golden brown and crispy. Keep an eye on them to prevent burning.

      Prepare the Strawberry Mixture: In a medium bowl, combine the sliced strawberries with the chopped basil. Sprinkle in a pinch of salt and freshly cracked pepper to taste. Gently toss the mixture to combine, ensuring not to bruise the strawberries.

        Assemble the Crostini: Once the baguette slices have cooled slightly, take a generous amount of softened goat cheese and spread it evenly on each piece.
