1 lb boneless, skinless chicken thighs

1/4 cup soy sauce

2 tbsp gochujang (Korean chili paste)

2 tbsp honey

1 tbsp rice vinegar

1 tsp sesame oil

2 cloves garlic, minced

1 tsp ginger, grated

1 tbsp vegetable oil

1/2 cup carrots, julienned

1/2 cup cucumber, julienned

1/4 cup green onions, finely sliced

1 head of butter lettuce or romaine, leaves separated for cups

Sesame seeds, for garnish

Fresh cilantro leaves, for garnish (optional)

Marinate the Chicken: In a medium mixing bowl, combine the soy sauce, gochujang, honey, rice vinegar, sesame oil, minced garlic, and grated ginger. Whisk until well blended. Add the chicken thighs, ensuring they are entirely coated in the marinade. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes, allowing the flavors to infuse (marinating for up to 2 hours will enhance the taste).

    Cook the Chicken: Heat the vegetable oil in a skillet over medium heat. Once hot, add the marinated chicken thighs.
