Ingredients

For the Beef Filling:

1 lb ground beef (preferably 80% lean)

1 tablespoon vegetable oil

1 small onion, finely diced

3 cloves garlic, minced

1 red bell pepper, diced

1 teaspoon fresh ginger, grated

2 tablespoons soy sauce

1 tablespoon sesame oil

1 teaspoon chili paste (adjust according to spice preference)

Salt and black pepper to taste

For the Mango Glaze:

1 ripe mango, peeled and diced

1 tablespoon honey

1 tablespoon rice vinegar

1 teaspoon fresh lime juice

Pinch of salt

For Serving:

1 head of butter or iceberg lettuce, leaves gently separated

Fresh cilantro leaves, for garnish

Sliced green onions, for garnish

Chopped peanuts, for garnish (optional)

Instructions

Prepare the Mango Glaze:

    - In a blender, add the diced mango, honey, rice vinegar, lime juice, and a pinch of salt.

      - Blend on high speed until the mixture is completely smooth and silky. Taste the glaze and adjust the seasoning if needed, then set it aside for later use.

        Cook the Beef Filling:

          - In a large skillet, pour in the vegetable oil and heat it over medium heat.

            - When the oil is shimmering, add the finely diced onion. Sauté for approximately 3-4 minutes, or until the onion has turned translucent and soft.

              - Stir in the minced garlic and freshly grated ginger, cooking for an additional minute until the kitchen fills with their fragrant aroma.

                - Add the ground beef to the skillet, breaking it apart with a spatula. Cook for about 6-8 minutes, or until the beef is thoroughly browned and no longer pink.

                  - Mix in the diced red bell pepper, soy sauce, sesame oil, chili paste, salt, and black pepper. Stir for another 2-3 minutes until the bell pepper is slightly softened. Remove the skillet from the heat.

                    Assemble the Wraps:

                      - Take a large, sturdy lettuce leaf and spoon a generous helping of the beef filling into the center.

                        - Drizzle a pleasing amount of the mango glaze over the beef filling.

                          - Garnish with fresh cilantro leaves, a sprinkle of sliced green onions, and chopped peanuts if desired for an extra crunch.

                            Serve:

                              - Serve the wraps immediately, accompanied by extra mango glaze on the side for dipping. Enjoy the bright, tropical flavors of your Tropical Beef Lettuce Wraps!
