1 can (5 oz) tuna in water, drained

1 cup fresh blueberries

2 cups mixed greens (spinach, arugula, and romaine)

1/2 cucumber, diced

1/4 red onion, thinly sliced

1/4 cup feta cheese, crumbled

1/4 cup walnuts, roughly chopped

2 tablespoons extra virgin olive oil

1 tablespoon fresh lemon juice

Salt and pepper, to taste

A handful of fresh mint leaves, chopped (optional)

Instructions
 

In a medium mixing bowl, add the drained tuna. Pour in 1 tablespoon of extra virgin olive oil, the fresh lemon juice, and a pinch of salt and pepper. Mix thoroughly until the tuna is evenly coated. Allow it to sit for a few minutes to let the flavors combine.
