Ingredients

4 medium-sized sweet potatoes

1 lb (450g) cooked chicken, shredded (rotisserie chicken works great)

1/2 cup buffalo sauce (adjust to your preferred spice level)

1/4 cup cream cheese, softened to room temperature

1/4 cup Greek yogurt or sour cream

1/2 cup shredded cheddar cheese

1/4 cup chopped green onions

1 tsp garlic powder

1 tsp onion powder

Salt and pepper, to taste

Olive oil, for drizzling

Fresh parsley, chopped (optional, for garnish)

Instructions

Preheat the Oven: Start by preheating your oven to 400°F (200°C). This will ensure it’s hot enough to roast the sweet potatoes evenly.

Prepare Sweet Potatoes: Rinse the sweet potatoes under cold water to remove any dirt. Using a fork, poke several holes in each potato. This step is crucial as it allows steam to escape during cooking, preventing the potatoes from bursting.

Roast Sweet Potatoes: Arrange the sweet potatoes on a baking sheet lined with parchment paper. Lightly drizzle with olive oil and rub it over the skin. Sprinkle with salt to enhance flavor. Roast in the preheated oven for 45 to 55 minutes, or until they are tender and easily pierced with a fork.

Prepare the Buffalo Chicken Filling: While the sweet potatoes are roasting, in a mixing bowl, combine the shredded chicken, buffalo sauce, softened cream cheese, Greek yogurt or sour cream, shredded cheddar cheese, garlic powder, onion powder, and a pinch of salt and pepper. Mix thoroughly until all ingredients are well blended and the mixture is smooth.

Fold in Green Onions: Gently fold half of the chopped green onions into the buffalo chicken mixture, preserving the other half for garnishing. This adds a fresh crunch to the filling.

Stuff the Sweet Potatoes: Once the sweet potatoes are cooked and cool enough to handle, slice each potato open lengthwise, being careful not to cut all the way through. Use a fork to fluff the insides and create space for the filling. Generously fill each potato with the buffalo chicken mixture, allowing it to heap over the top.

Melt Cheese (Optional): For an extra cheesy delight, return the stuffed sweet potatoes to the baking sheet. Sprinkle additional shredded cheese on top of each one and place them back in the oven for about 5-7 minutes, or until the cheese is melted and bubbly.

Garnish and Serve: Remove the stuffed sweet potatoes from the oven. Garnish with the remaining chopped green onions and sprinkle with fresh parsley if desired. Serve hot, accompanied by extra buffalo sauce for drizzling if you like it spicier.

                  Prep Time: 15 minutes | Total Time: 1 hour 15 minutes | Servings: 4

                    - Presentation Tips: Serve the stuffed sweet potatoes on a rustic wooden platter, allowing guests to pick their favorites. A drizzle of creamy ranch dressing around the platter can add an appealing contrast to the vibrant colors of the dish. Enjoy!
