8 cups stale brioche or challah bread, cut into 1-inch cubes

1 cup pecans, roughly chopped

4 large eggs, at room temperature

2 cups whole milk, warmed

1 cup heavy cream, slightly warmed

1 cup granulated sugar

1/2 cup packed light brown sugar

1 tablespoon pure vanilla extract

1 teaspoon ground cinnamon

1/4 teaspoon fine sea salt

1/2 cup unsalted butter, melted and slightly cooled

1 cup caramel sauce (store-bought or homemade)

Optional: whipped cream or vanilla ice cream for serving

Instructions
 

Preheat the Oven: Set your oven to 350°F (175°C). Prepare a 9x13-inch baking dish by greasing it generously with butter or non-stick cooking spray to prevent sticking.

    Prepare the Bread: In a large mixing bowl, combine the cubed brioche or challah with the chopped pecans. Gently toss the bread and pecans together until they are well mixed, then set aside for later use.

      Mix Wet Ingredients: In a separate medium bowl, whisk together the eggs until well beaten. Then add the warmed whole milk, heavy cream, granulated sugar, brown sugar, vanilla extract, ground cinnamon, fine sea salt, and melted butter. Mix thoroughly until the mixture is smooth and all ingredients are well incorporated.

        Combine Mixtures: Carefully pour the egg and cream mixture over the bread and pecan mixture. Using a spatula or wooden spoon, gently stir the mixture until all the bread pieces are coated with the liquid. Allow the mixture to sit for 15-20 minutes, giving the bread ample time to soak in the custard.

          Transfer to Baking Dish: Spoon the soaked bread mixture into your prepared baking dish, spreading it out evenly. Drizzle half of the caramel sauce over the top of the bread pudding, ensuring it seeps into the layers. Reserve the remaining caramel sauce for serving later.
