Preheat the Oven: Begin by preheating your oven to 375°F (190°C). Prepare a muffin tin by greasing each cup with cooking spray or a light coating of olive oil.

    Sauté Vegetables: In a medium skillet, heat the olive oil over medium heat. Once hot, add the finely diced onion and sauté, stirring occasionally, until the onion becomes translucent (about 3-4 minutes). Next, add the minced garlic and cook for an additional minute until it becomes fragrant. Introduce the chopped spinach to the skillet and stir, cooking until the spinach is wilted, which should take about 2-3 minutes. Season the mixture with salt and pepper, and if you wish, add paprika for a hint of warmth. Remove from heat and let it cool slightly.

      Prepare Cheese Mixture: In a mixing bowl, combine the creamy ricotta cheese, shredded cheddar cheese, and grated Parmesan cheese. Blend these ingredients thoroughly, and add a light seasoning of salt and pepper to taste.
