Ingredients

8 oz (225g) penne pasta

2 tablespoons olive oil

1 small onion, diced

2 cloves garlic, minced

1 cup diced smoked ham

1 cup salami, sliced and quartered

1 cup pepperoni, sliced

1 cup Swiss cheese, shredded

1 cup mozzarella cheese, shredded

1 cup cream cheese, softened at room temperature

1 cup heavy cream

1 teaspoon dried oregano

1 teaspoon dried basil

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions

Cook the Pasta: Bring a large pot of salted water to a rolling boil. Add the penne pasta and cook according to package instructions until al dente. Once cooked, drain the pasta and set aside.

Sauté Aromatics: In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes, or until the onion turns translucent. Add the minced garlic and continue to cook for an additional minute until fragrant, stirring frequently to prevent burning.

Add Meats: Stir in the diced smoked ham, quartered salami, and pepperoni. Cook for 5-7 minutes, stirring occasionally, until the meats are heated through and start to become slightly crispy.

Make Cheese Mixture: In a large mixing bowl, combine the softened cream cheese and heavy cream. Add the dried oregano and dried basil, and mix until the mixture is smooth and creamy. Taste and season with salt and pepper as desired.

Combine Ingredients: Add the cooked penne pasta to the skillet with the meat mixture. Sprinkle in half of the shredded Swiss and mozzarella cheeses. Pour the creamy cheese mixture over the pasta and meats, stirring gently until everything is well combined.

Prepare for Baking: Preheat your oven to 350°F (175°C). Lightly grease a baking dish with non-stick spray or olive oil. Transfer the pasta and meat mixture into the prepared baking dish, spreading it out evenly. Sprinkle the remaining shredded Swiss and mozzarella cheeses on top.

Bake: Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the cheese is melted, bubbly, and golden brown on top.

Garnish and Serve: After baking, remove the casserole from the oven and allow it to cool for a few minutes before serving. Garnish with freshly chopped parsley for a pop of color. Serve hot and savor the cheesy goodness of your charcuterie casserole!
