Ingredients

2 cups cooked chicken, shredded

1 cup cream cheese, softened to room temperature

1 cup shredded cheddar cheese

1 cup shredded Monterey Jack cheese

1/4 cup sour cream

1 packet of taco seasoning (about 1 ounce)

1/2 cup diced tomatoes, drained

1/4 cup chopped green onions

4 large flour tortillas (10-inch size)

Fresh cilantro, for garnish (optional)

Instructions

Prepare the Chicken Mixture:

In a large mixing bowl, thoroughly mix together the shredded chicken, softened cream cheese, cheddar cheese, Monterey Jack cheese, sour cream, taco seasoning, drained diced tomatoes, and chopped green onions. Combine until all ingredients are evenly distributed, creating a creamy and flavorful filling.

      Roll the Tortillas:

On a clean work surface, lay out each large flour tortilla. Using a spatula or the back of a spoon, spread a generous layer of the chicken mixture over each tortilla, ensuring you cover the surface while leaving about a half-inch border around the edges for easier rolling.

          Form the Pinwheels:

Starting from one side of the tortilla, carefully begin rolling it up tightly to create a log. Make sure to keep the filling secure inside and tuck in the edges as you roll to prevent any leakage.

              Chill the Rolls:

After rolling all the tortillas, wrap each roll tightly in plastic wrap or aluminum foil. Place the rolls in the refrigerator and chill for at least 30 minutes. This will help to firm up the filling, making it easier to slice them into pinwheels.

                  Slice and Serve:

Once chilled, unwrap each roll and, using a sharp knife, slice them into 1-inch thick pinwheels. Arrange the cut pinwheels on a decorative serving platter, and optionally, garnish with fresh cilantro to add a pop of color and flavor.

                      Enjoy:

Serve your Cheesy Chicken Taco Pinwheels chilled or at room temperature. They're perfect as appetizers for parties, during game days, or as a delightful snack any time of the day!
