Ingredients

1 lb boneless, skinless chicken breasts, diced

2 tablespoons olive oil

1 medium onion, diced

3 cloves garlic, minced

2 (4 oz) cans diced green chiles

1 teaspoon ground cumin

1 teaspoon smoked paprika

½ teaspoon chili powder

Salt and pepper, to taste

1 (14 oz) can black beans, drained and rinsed

1 (15 oz) can corn, drained

1 cup salsa (choose your favorite variety)

8 small corn tortillas, cut into strips

1 cup shredded Monterey Jack cheese

1 cup shredded cheddar cheese

Fresh cilantro, for garnish

Lime wedges, for serving

Instructions

Cook the Chicken: In a large skillet, heat the olive oil over medium-high heat. Add the diced chicken, seasoning it generously with salt and pepper. Sauté the chicken for about 6-8 minutes, or until it is browned and cooked through. Once done, remove the chicken from the skillet and place it on a plate to rest.

Sauté Aromatics: Using the same skillet, reduce the heat to medium. Add the diced onion and cook for approximately 3-4 minutes, stirring occasionally, until the onion is translucent. Next, add the minced garlic and sauté for an additional 30 seconds, or until fragrant.

Add Flavor: Mix in the diced green chiles, ground cumin, smoked paprika, and chili powder. Cook this mixture for about 1-2 minutes, stirring frequently, to allow the spices to bloom and develop their flavors.

Combine Ingredients: Return the cooked chicken to the skillet. Add the drained black beans, corn, and salsa, stirring everything together until well combined. Let the mixture simmer for about 5 minutes, allowing the flavors to meld.

Add Tortilla Strips: Gently fold the tortilla strips into the skillet mixture, ensuring they are evenly coated with the sauce. This will help them absorb all the delicious flavors.

Cheese It Up: Evenly sprinkle both the Monterey Jack and cheddar cheese over the top of the skillet. Cover the skillet with a lid and continue to cook for another 5 minutes, or until the cheese has melted and is bubbly.

Garnish and Serve: Once finished, remove the skillet from heat. Garnish with fresh cilantro for a vibrant touch. Serve hot, accompanied by lime wedges for a zesty kick!
