Ingredients

1 lb (450g) ground beef

1 cup long-grain white rice

1 small onion, finely chopped

3 cloves garlic, minced

1 bell pepper, diced (any color)

1 can (14.5 oz) diced tomatoes, undrained

2 cups beef broth

1 cup shredded cheddar cheese (or your favorite cheese)

1 teaspoon chili powder

1 teaspoon paprika

1 teaspoon Italian seasoning

Salt and pepper to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Instructions

Cook the Ground Beef: In a large skillet, heat the olive oil over medium heat. Add the finely chopped onion and sauté until it becomes translucent, about 3-4 minutes. Then, stir in the minced garlic and diced bell pepper, cooking for an additional 2 minutes until fragrant. Next, add the ground beef, breaking it apart with a wooden spoon. Season the mixture with salt, pepper, chili powder, paprika, and Italian seasoning. Cook until the beef is browned and fully cooked through, approximately 5-7 minutes.

Add Rice and Tomatoes: Stir in the long-grain white rice, ensuring it is thoroughly mixed and coated with the flavorful beef mixture. Carefully pour in the diced tomatoes along with their juices, as well as the beef broth. Increase the heat and bring the mixture to a rolling boil.

Simmer: Once the mixture is boiling, reduce the heat to low. Cover the skillet with a lid and allow it to simmer gently for about 18-20 minutes, or until the rice is tender and has absorbed most of the liquid. Avoid lifting the lid too frequently to ensure even cooking and steam retention.

Add Cheese: When the rice is fully cooked, remove the skillet from the heat. Sprinkle the shredded cheese evenly over the top of the mixture. Cover the skillet again for a few minutes, allowing the residual heat to melt the cheese until it’s gooey and bubbly.

Garnish and Serve: Fluff the beef and rice mixture gently with a fork to combine it all together. Garnish generously with chopped fresh parsley for a pop of color and freshness. Serve warm, and feel free to add extra cheese on top according to your preference!
