Ingredients

2 cups fresh broccoli florets

1 cup diced cooked ham

1 cup shredded cheddar cheese (plus additional for topping)

1 cup milk

6 large eggs

1 cup diced bell peppers (choose your favorite color)

½ cup chopped green onions

1 teaspoon garlic powder

½ teaspoon onion powder

Salt and pepper to taste

1 tablespoon olive oil

4 slices of bread (cubed, preferably day-old for better texture)

Instructions

Preheat the Oven: Start by preheating your oven to 350°F (175°C). Grease a 9x13-inch baking dish generously with olive oil or non-stick cooking spray to prevent sticking.

Prepare the Broccoli: Bring a pot of water to a boil and blanch the broccoli florets for about 2 minutes. Once they turn bright green, drain the broccoli and immediately transfer them to a bowl of ice water to halt the cooking process. After a few minutes, drain again and chop the florets into smaller, bite-sized pieces for easier eating.

Sauté the Vegetables: In a large skillet, heat the olive oil over medium heat. Add the diced bell peppers and sauté them for about 3-4 minutes until they begin to soften. Introduce the cooled broccoli along with garlic powder, onion powder, salt, and pepper, stirring everything together and cooking for an additional 2 minutes. Remove from heat and let the mixture cool slightly.

Mix the Egg Mixture: In a separate large mixing bowl, whisk together the eggs, milk, and a generous pinch of salt and pepper until well combined and slightly frothy.

Layer the Ingredients: In your prepared baking dish, evenly spread the cubed bread across the bottom. Next, layer the sautéed broccoli and bell pepper mixture on top of the bread. Evenly distribute the diced ham over the vegetables, then pour the egg mixture over everything, making sure to cover all the ingredients well.

Add Cheese: Generously sprinkle the shredded cheddar cheese on top. For cheese lovers, feel free to add more cheddar to achieve your desired cheesiness.

Bake: Place the baking dish in the preheated oven and bake for 30-35 minutes. The bake is done when the center is set firmly and the top is a beautiful golden brown. To check for doneness, insert a toothpick into the center—if it comes out clean, it’s ready!

Garnish and Serve: After baking, remove the dish from the oven and allow it to cool for about 5 minutes. Garnish with freshly chopped green onions for a burst of color and flavor. Cut into squares and serve warm!
