2 cups (480ml) beef or vegetable broth

1 cup (240ml) canned diced tomatoes with green chilies (drained)

1 cup (240ml) corn (frozen or canned)

1 cup (240ml) shredded cheddar cheese

1/2 cup (120ml) sour cream

1/4 cup (60ml) chopped fresh cilantro (optional)

Salt and pepper to taste

Optional toppings: sliced jalapeños, diced avocado, or additional shredded cheese

Instructions
