Ingredients

12 large eggs

1 cup whole milk

2 cups shredded cheddar cheese

1 cup crumbled feta cheese

1 cup diced bell peppers (red, green, or yellow)

1 cup chopped fresh spinach

1 medium onion, diced

4 cups cubed day-old bread (croissants or brioche recommended)

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

½ teaspoon paprika

Fresh chives or parsley for garnish (optional)

Instructions

Preheat the Oven: Start by preheating your oven to 350°F (175°C). While it’s heating, grease a 9x13-inch baking dish with non-stick spray or a light coating of butter to prevent sticking.

Sauté the Vegetables: In a large skillet over medium heat, add the diced onion and bell peppers. Cook for about 5 minutes, stirring occasionally, until they become tender. Add the chopped spinach, continuing to sauté for another 1-2 minutes until the spinach is wilted. Once cooked, remove from heat and set the skillet aside.

Prepare the Egg Mixture: In a spacious mixing bowl, crack the eggs and whisk them together with the whole milk until the mixture is smooth and fully blended. Stir in the garlic powder, onion powder, paprika, salt, and pepper, mixing until combined.

Combine the Ingredients: Pour the sautéed vegetable mixture into the egg mixture. Carefully fold in the cubed bread, shredded cheddar cheese, and crumbled feta cheese, ensuring that all components are evenly distributed throughout.

Assemble the Casserole: Transfer the entire mixture into the greased baking dish. Spread everything out evenly, ensuring that the bread cubes are submerged in the egg mixture to cook through properly.

Bake: Cover the dish with aluminum foil and place it in the preheated oven. Bake for 30 minutes covered. After 30 minutes, carefully remove the foil and continue baking for an additional 15-20 minutes, or until the top is a beautiful golden brown and the egg custard has set.

Cool and Serve: Once baked, remove the casserole from the oven and allow it to cool for 5-10 minutes before slicing. For an extra touch of freshness, sprinkle with chopped chives or parsley before serving warm.
