Ingredients

10 rice paper wrappers

1 cup vermicelli noodles, cooked and cooled

1 cup cooked shrimp, halved lengthwise (or tofu for a vegetarian option)

1 medium cucumber, julienned

1 medium carrot, julienned

1 avocado, sliced

1 cup mixed herb leaves (mint, cilantro, and basil)

1 red bell pepper, thinly sliced

1 cup cabbage, finely shredded

½ cup peanut sauce (store-bought or homemade) for dipping

Optional: 1 tablespoon sesame seeds for garnish

Instructions

Prepare the Noodles: Begin by cooking the vermicelli noodles according to the package's instructions. Once cooked, thoroughly rinse them under cold water to halt the cooking process and drain well. Set aside to cool completely.

Set Up Your Rolling Station: Organize your workspace by gathering all ingredients within reach. Fill a large shallow bowl with warm water, which will be used to soften the rice paper wrappers.

Soften the Rice Paper: For each roll, dip one rice paper wrapper into the warm water for about 10-15 seconds, or until it becomes pliable yet firm enough to handle. Carefully lay the softened wrapper flat on a clean surface or a damp kitchen towel.

        Assemble the Rolls:

          a. In the lower third of the softened rice paper, place a small handful of the cooled vermicelli noodles.

            b. Next, layer on a few pieces of shrimp (or tofu for the vegetarian option), followed by small sticks of cucumber, carrot, red bell pepper, and slices of avocado. Add a handful of shredded cabbage and sprinkle with fresh herbs.

              c. Remember: Don’t overfill—aim for a modest amount for easier rolling!

Roll It Up: Starting from the edge of the wrapper closest to you, gently fold the bottom over the filling. Fold in the sides, then continue to roll tightly until the rice paper fully encloses and secures all ingredients.

Repeat: Continue this process with the remaining rice paper wrappers and filling ingredients. Place the finished rolls neatly on a serving platter.

Chill: Lightly cover the rolls with a damp cloth to prevent drying out, and refrigerate for at least 30 minutes to 1 hour. This chilling time helps the flavors meld and allows the rolls to firm up for easier handling.

Serve: Just before serving, you may slice the rolls in half diagonally for an appealing presentation. If desired, garnish with sesame seeds on top. Serve the chilled rolls alongside a small bowl of peanut sauce for dipping.

Enjoy: Indulge in these vibrant, refreshing summer rice paper rolls, perfect for a light meal or as an elegant appetizer!
