Ingredients

2 ripe bananas, thoroughly mashed

1 cup rolled oats

1/2 cup almond butter (or any nut butter of your choice)

1/3 cup honey or maple syrup

1 teaspoon vanilla extract

1/2 teaspoon baking powder

1/2 teaspoon ground cinnamon

1/4 teaspoon salt

1/2 cup dark chocolate chips

1/4 cup chopped walnuts or pecans (optional)

Instructions

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Prepare an 8-inch square baking dish by lining it with parchment paper, ensuring there is some overhang on the sides; this makes it easier to lift the bars out once they are baked.

Mix the Wet Ingredients: In a large mixing bowl, combine the thoroughly mashed bananas with the almond butter, honey (or maple syrup), and vanilla extract. Mix these ingredients together until the mixture is smooth and well-integrated.

Combine Dry Ingredients: In a separate bowl, whisk together the rolled oats, baking powder, ground cinnamon, and salt until evenly mixed.

Blend Wet and Dry Ingredients: Gradually add the dry mixture to the wet ingredients. Stir until the two mixtures are fully incorporated. The resulting mixture should be thick yet pliable, resembling a cookie dough texture.

Incorporate Chocolate and Nuts: Gently fold in the dark chocolate chips and the chopped nuts, if you’re using them. Ensure they are distributed evenly throughout the mixture.

Transfer to Baking Dish: Carefully pour the mixture into the prepared baking dish. Use a spatula to spread it out evenly and press down gently to compact the mixture into the dish.

Bake: Place the baking dish in the preheated oven and bake for approximately 25-30 minutes. Watch for the bars to become firm and take on a lightly golden color around the edges.

Cool and Cut: Once baked, allow the bars to cool in the baking dish for about 10 minutes. Then, using the parchment overhang, lift them out and let them cool completely on a wire rack. Once cooled, cut them into squares or bars of your desired size.

Store: To keep your bars fresh, store them in an airtight container in the refrigerator for up to one week. Alternatively, you can freeze them for longer storage.

Prep Time: 15 minutes | Total Time: 45 minutes | Servings: 9-12 bars

                      - Presentation Tips: For an appealing serving suggestion, stack a few bars on a decorative plate and drizzle with additional melted dark chocolate. Garnish with banana slices or a sprinkle of crushed nuts for an extra touch!
