1 cup coconut milk

Zest of 2 limes

Juice of 2 limes

2 tablespoons honey

2 tablespoons soy sauce

1 teaspoon freshly grated ginger

2 cloves garlic, minced

1 teaspoon red pepper flakes (optional for heat)

1 cup shredded coconut (choose either sweetened or unsweetened based on preference)

Wooden or metal skewers (if using wooden skewers, soak them in water for 30 minutes to prevent burning)

Marinate the Shrimp: In a large mixing bowl, whisk together the coconut milk, lime zest, lime juice, honey, soy sauce, grated ginger, minced garlic, and optional red pepper flakes until fully combined. Add the peeled and deveined shrimp to the bowl, tossing to ensure each piece is evenly coated with the marinade. Cover the bowl with plastic wrap and place it in the refrigerator. Allow the shrimp to marinate for a minimum of 30 minutes or up to 2 hours to enhance their flavor.
