8 oz whole wheat pasta (fusilli or penne)

1 can (15 oz) chickpeas, drained and rinsed

1 cup cherry tomatoes, halved

1 cucumber, diced

1 red bell pepper, diced

1 small red onion, finely chopped

1/4 cup fresh parsley, chopped

1/4 cup feta cheese, crumbled (optional)

1/4 cup extra virgin olive oil

3 tbsp red wine vinegar

1 tsp Dijon mustard

1 tsp garlic powder

Salt and pepper, to taste

Cook the Pasta: In a large pot, fill with water and add a generous pinch of salt, then bring to a rolling boil. Add the whole wheat pasta and cook according to the package instructions until it reaches al dente, usually about 8-10 minutes. Once cooked, drain the pasta in a colander and rinse under cold running water to halt the cooking process. Allow it to cool completely before using.

    Prepare the Vegetables: While the pasta cooks, take the opportunity to prepare your vegetables. Chop the cherry tomatoes in half, dice the cucumber into bite-sized pieces, and finely chop the red bell pepper and red onion. In a large mixing bowl, combine these fresh ingredients with the drained chickpeas and chopped parsley.
