8 oz. fusilli pasta (or your favorite pasta shape)

2 cups cooked chicken, either shredded or cubed

1 cup cherry tomatoes, halved

1/2 cup Kalamata olives, pitted and sliced

1/2 cup feta cheese, crumbled

1/4 cup fresh parsley, roughly chopped

1/4 cup olive oil

2 tablespoons red wine vinegar

1 tablespoon fresh lemon juice

1 teaspoon dried oregano

Salt and freshly ground black pepper, to taste

Cook the Pasta: In a large pot, bring salted water to a vigorous boil. Add the fusilli pasta and cook according to the package instructions until al dente. Drain the pasta and rinse it under cold water to stop the cooking process. Set the pasta aside to cool completely.

      Combine Ingredients: In a spacious mixing bowl, combine the cooled pasta with the cooked chicken, halved cherry tomatoes, diced cucumber, finely chopped red onion, sliced Kalamata olives, crumbled feta cheese, and chopped fresh parsley.
