1 head of garlic

1 tablespoon olive oil

1 cup shredded mozzarella cheese

1 cup shredded cheddar cheese

1 cup all-purpose flour

1 teaspoon baking powder

1 teaspoon salt

1 teaspoon dried oregano

1/2 teaspoon freshly ground black pepper

1/2 cup unsalted butter, melted

2 large eggs

1/4 cup fresh parsley, finely chopped (for garnish)

Optional: red pepper flakes, for an added spicy kick

Instructions
 

Roast the Garlic:

    - Preheat your oven to 400°F (200°C).

      - Carefully slice the top off the head of garlic to expose the individual cloves. Drizzle the exposed cloves with olive oil, then wrap the entire head loosely in aluminum foil.

        - Place the wrapped garlic on a baking tray and roast in the preheated oven for 30-35 minutes, or until the cloves are soft and caramelized. Once roasted, allow it to cool for a few minutes; then squeeze the delicate garlic from the skins and set aside.

          Prepare the Dough:

            - In a large mixing bowl, sift together the all-purpose flour, baking powder, salt, dried oregano, and black pepper for an even blend.

              - In a separate bowl, whisk together the melted butter, eggs, and the roasted garlic until the mixture is smooth and well combined.

                Combine Ingredients:

                  - Gradually fold the wet mixture into the dry ingredients using a spatula or spoon until just combined—be careful not to overmix.

                    - Gently incorporate the shredded mozzarella and cheddar cheese, ensuring it’s evenly distributed throughout the dough.

                      Shape the Snacks:

                        - Preheat your oven once again to 375°F (190°C) and line a baking sheet with parchment paper for easy clean-up.

                          - Using your hands or a cookie scoop, portion out the dough into small balls (around the size of a golf ball) and arrange them on the prepared baking sheet, leaving about 2 inches of space between each ball.
