Ingredients

1 pound Italian sausage (your choice of mild or spicy)

1 tablespoon olive oil

1 medium onion, thinly sliced

2 bell peppers (one red and one yellow), sliced into thin strips

2 cloves garlic, minced

1 teaspoon dried oregano

1/2 teaspoon red pepper flakes (optional, for added spiciness)

Salt and black pepper, to taste

1 can (14.5 ounces) diced tomatoes, undrained

2 tablespoons balsamic vinegar

Fresh basil leaves, for garnish

Grated Parmesan cheese, for serving

Crusty bread or cooked pasta, for serving

Instructions

Cook the Sausage: In a large skillet, heat the olive oil over medium heat. Once hot, add the Italian sausage. Use a spatula to break it into bite-sized pieces as it cooks. Sauté until the sausage is well browned and cooked through, about 5-7 minutes. Once cooked, transfer the sausage to a plate and set it aside, leaving the flavorful drippings in the skillet.

Sauté the Vegetables: In the same skillet with the drippings, add the sliced onion and bell peppers. Sauté the vegetables for about 5 minutes or until they start to soften. Then, add the minced garlic, dried oregano, red pepper flakes (if using), and season generously with salt and black pepper. Continue to cook for another 2-3 minutes, stirring frequently, until the garlic becomes fragrant and slightly golden.

Combine Ingredients: Return the previously cooked sausage to the skillet with the sautéed vegetables. Stir in the can of diced tomatoes along with their juice and the balsamic vinegar. Increase the heat slightly to bring the mixture to a gentle simmer. Allow it to cook for an additional 5-10 minutes, stirring occasionally, so the flavors can blend together beautifully.

Final Adjustments: Taste the dish and adjust the seasoning if needed. Feel free to add more salt, black pepper, or red pepper flakes according to your preference for heat.

Serve: Ladle the warm and cozy sausage and peppers mixture into serving bowls. Garnish with fresh basil leaves and a generous sprinkle of grated Parmesan cheese on each serving. For a delightful meal, serve alongside crusty bread for dipping or over a bed of cooked pasta to make it even heartier.
