Ingredients

12 oz spaghetti or linguine

2 ripe avocados, pitted and peeled

2 cloves garlic, minced

1/4 cup fresh basil leaves, plus extra for garnishing

2 tablespoons fresh lemon juice

1/4 cup extra virgin olive oil

1/4 teaspoon red pepper flakes (optional for a kick)

Salt and black pepper, to taste

1/2 cup cherry tomatoes, halved (for garnish)

Grated Parmesan cheese (optional, for serving)

Instructions

Cook the Pasta: Bring a large pot of water to a rapid boil and generously salt it. Add the spaghetti or linguine, cooking it according to the package directions until just al dente. Before draining, reserve approximately 1 cup of the pasta water to adjust the sauce's consistency later. Drain the pasta and set it aside, allowing it to cool slightly.

Prepare the Avocado Sauce: In a food processor, add the pitted and peeled avocados, minced garlic, fresh basil leaves, lemon juice, extra virgin olive oil, red pepper flakes (if using), and a generous pinch of salt and black pepper. Blend the mixture until it becomes a smooth and creamy consistency. If the sauce feels too thick, gradually incorporate the reserved pasta water, a few tablespoons at a time, until you achieve your desired creaminess.

Combine Ingredients: In a large mixing bowl, gently toss the drained pasta with the creamy avocado sauce. Ensure that the pasta is evenly coated. If the sauce is still too thick for your liking, feel free to add more of the reserved pasta water until it's perfectly creamy.

Serve and Garnish: Divide the avocado pasta among individual serving plates. Top each plate with halved cherry tomatoes and a sprinkle of additional fresh basil for brightness. If desired, add a generous scattering of grated Parmesan cheese for an extra layer of flavor.

Enjoy: Serve the dish immediately for the freshest taste and enjoy every creamy, flavorful bite!

Presentation Tips: For an appealing presentation, consider serving the pasta in shallow bowls, allowing the garnishes to sit atop the vibrant green sauce, and drizzle a little extra olive oil around the edge of the plate for added elegance.
