Creamy Broccoli Cheddar Quinoa

1 cup quinoa, thoroughly rinsed

2 cups vegetable broth or water

2 cups fresh broccoli florets, trimmed

1 cup sharp cheddar cheese, finely shredded

1/2 cup cream cheese, softened to room temperature

1/2 cup whole milk or your choice of dairy-free alternative

2 cloves garlic, minced

1/2 teaspoon onion powder

1/2 teaspoon smoked paprika

Salt and pepper, to taste

Optional: Chopped green onions or fresh parsley for garnish

Instructions
 

In a medium-sized pot, combine the rinsed quinoa and vegetable broth (or water). Bring the mixture to a rolling boil over medium-high heat. Once boiling, reduce the heat to low, cover the pot, and let it simmer for approximately 15 minutes or until the quinoa is fluffy and the liquid has been absorbed. After cooking, remove the pot from heat and let it sit, covered, for an additional 5 minutes to allow the quinoa to steam.

    While the quinoa is cooking, prepare the broccoli. Steam the fresh broccoli florets until they are tender yet still retain a vibrant green color, about 4-5 minutes. You can use a steaming basket on the stovetop or microwave them with a splash of water. Once cooked, set the broccoli aside.

      In a large mixing bowl, combine the fluffy quinoa, steamed broccoli, minced garlic, onion powder, smoked paprika, and a pinch of salt and pepper. Mix everything together until well incorporated.

        Add the softened cream cheese to the quinoa and broccoli mixture. Stir vigorously until the cream cheese is fully integrated and the mixture becomes creamy; this may take a minute or two.

          Gradually pour in the whole milk while continuously stirring the mixture until it achieves a smooth and creamy consistency. Adjust the amount of milk based on your desired creaminess.

            Carefully fold in the shredded cheddar cheese, allowing it to melt and meld into the dish. Taste the mixture and adjust the seasoning with additional salt and pepper if needed.
