Ingredients

2 cups fresh broccoli florets, roughly chopped

1 cup uncooked long-grain white rice

3 cups vegetable or chicken broth

1 cup heavy cream

1 cup shredded sharp cheddar cheese

1 cup sour cream

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon Dijon mustard

½ teaspoon black pepper

½ teaspoon salt

1 cup breadcrumbs (optional, for topping)

2 tablespoons olive oil or melted butter (for mixing with breadcrumbs)

Fresh parsley, chopped (for garnish)

Instructions

Begin by preheating your oven to 350°F (175°C). This ensures it’s ready when you need it later.

In a medium saucepan, add the uncooked rice along with the vegetable or chicken broth. Bring this mixture to a boil over medium heat, then reduce the heat to low. Cover the saucepan and let it simmer for about 15-18 minutes, or until the rice is tender and the liquid has been fully absorbed.

While the rice cooks, take a large mixing bowl and whisk together the heavy cream, sour cream, garlic powder, onion powder, Dijon mustard, black pepper, and salt. Make sure the ingredients are thoroughly combined for a rich, creamy mixture.

In a separate pot, bring a small amount of water to a boil. Add the chopped broccoli florets and blanch them for 2-3 minutes, just until they are bright green and tender-crisp. Drain the broccoli and immediately rinse it under cold water to stop the cooking process and preserve its vibrant color.

Once the rice has finished cooking, fluff it with a fork. Carefully fold the fluffy rice into the creamy mixture from earlier. Then gently mix in the blanched broccoli and ¾ cup of the shredded cheddar cheese, ensuring everything is well combined.

Prepare a 9x13-inch baking dish by spraying it with cooking spray or lightly greasing it with olive oil. Pour the creamy broccoli rice mixture into the dish, spreading it out evenly to create a nice layer.

In a small bowl, combine the breadcrumbs with the olive oil or melted butter, mixing until the breadcrumbs are evenly coated. Sprinkle this breadcrumb mixture evenly over the top of the casserole. To enhance the cheesiness, top it off with the remaining cheddar cheese.

Place the dish in the preheated oven and bake for 25-30 minutes, or until the casserole is bubbling and the top has turned a beautiful golden brown.

Once done, remove the casserole from the oven and allow it to cool for a few minutes. Just before serving, garnish with a sprinkle of freshly chopped parsley for a pop of color and flavor.
