Creamy Cheesy Cauliflower Rice

1 large head of cauliflower (approximately 4 cups when riced)

1 cup heavy cream

1 cup shredded sharp cheddar cheese

1/2 cup grated Parmesan cheese

2 tablespoons unsalted butter

3 cloves garlic, minced

1/2 teaspoon onion powder

1/2 teaspoon smoked paprika

Salt and freshly ground black pepper to taste

Fresh chives or parsley, chopped (for garnish, optional)

Instructions
 

Prepare the Cauliflower: Begin by removing the leaves and stem from the cauliflower. Cut the head into florets. In a food processor, pulse the florets until they resemble small rice grains. If you don’t have a food processor, you can also use a box grater to finely grate the cauliflower until it is rice-sized.

    Cook the Cauliflower Rice: Heat a large skillet over medium heat and add the unsalted butter. Once melted, add the minced garlic and sauté for about 1 minute, stirring continuously, until fragrant but not browned—be cautious as garlic can burn quickly.

      Add the Riced Cauliflower: Introduce the riced cauliflower to the skillet, along with the onion powder, smoked paprika, salt, and pepper. Cook for about 5-7 minutes, stirring occasionally, until the cauliflower is tender and lightly golden.

        Incorporate the Cream: Pour the heavy cream into the skillet and mix thoroughly. Allow the mixture to simmer for 2 minutes to enable the cream to reduce and thicken slightly.

          Mix in the Cheese: Gradually add the shredded sharp cheddar and grated Parmesan cheese to the skillet, stirring continuously until the cheeses melt and the mixture becomes rich and creamy. Taste the mixture and adjust the seasoning with additional salt and pepper if needed.
