1 cup heavy cream

1 cup black beans, drained and rinsed

2 cups corn (fresh, frozen, or canned)

1 teaspoon chili powder

1 teaspoon ground cumin

Salt and pepper, to taste

2 cups shredded Monterey Jack cheese

Fresh cilantro, chopped (for garnish)

Cook the Chicken: Heat the olive oil in a large skillet over medium heat. Once the oil is hot, add the cubed chicken pieces, seasoning them with salt and pepper.
