3 cloves garlic, minced

1 bell pepper (red, yellow, or green), diced

1 can (15 oz) black beans, drained and rinsed thoroughly

1 cup corn kernels (can be fresh, frozen, or canned)

1 packet taco seasoning mix (approximately 1 oz)

1 cup chicken broth

1 cup heavy cream

1 cup shredded cheddar cheese

1 cup diced tomatoes (fresh or canned)

Salt and pepper, to taste

Fresh cilantro, chopped, for garnish

Lime wedges, for serving

Tortilla chips, optional, for serving alongside

Sauté the Chicken: In a large skillet over medium heat, pour in the olive oil. Once the oil is hot, add the diced chicken breast. Season generously with salt and pepper. Cook for approximately 5-7 minutes, stirring occasionally, until the chicken turns golden brown and is thoroughly cooked.
