Ingredients

1 can (15 oz) chickpeas, drained and rinsed

1 cup romaine lettuce, chopped

1/2 cup cherry tomatoes, halved

1/4 cup grated Parmesan cheese (or nutritional yeast for a vegan option)

1/4 cup Caesar dressing (store-bought or homemade)

4 whole-grain or spinach tortillas

Salt and pepper to taste

Optional: lemon wedges for serving

For Homemade Caesar Dressing:

1/2 cup Greek yogurt (or a plant-based yogurt substitution)

2 tablespoons tahini

2 tablespoons lemon juice

1 tablespoon Dijon mustard

1 small garlic clove, minced

1 tablespoon Worcestershire sauce (or a vegan alternative)

Salt and pepper to taste

Instructions

Prepare the Chickpea Filling:

    - In a large mixing bowl, lightly mash the rinsed chickpeas using a fork or potato masher. Aim to keep some whole for added texture.

      - Add the chopped romaine lettuce, halved cherry tomatoes, grated Parmesan cheese (or nutritional yeast), and Caesar dressing to the bowl. Gently fold the ingredients together until well combined. Season with salt and pepper to taste, adjusting as needed for your preference.

Make the Caesar Dressing (if homemade):

          - In a separate small bowl, whisk together the Greek yogurt, tahini, lemon juice, Dijon mustard, minced garlic, Worcestershire sauce, salt, and pepper until the mixture is smooth and creamy. This dressing will add a rich flavor to your wraps.

            Assemble the Wraps:

              - Place the tortillas on a clean flat surface. Divide the chickpea mixture evenly among the tortillas, spooning it onto the center while leaving space at the edges to make rolling easier.

                - Carefully roll each tortilla tightly, folding in the sides as you go to create a neat wrap.

                  Serve:

                    - Cut each wrap in half diagonally for easier handling. Arrange the wraps on plates, and serve them alongside lemon wedges for an extra zesty kick that enhances the flavors.

                      Enjoy:

                        - Dive into these delicious and satisfying wraps that are perfect for a quick lunch or a light dinner that doesn't compromise on taste!
