8 oz (225 g) pasta of your choice (penne, fusilli, or spaghetti)

1 can (15 oz) chickpeas, drained and rinsed

1 cup unsweetened almond milk (or any plant-based milk)

2 tablespoons olive oil

4 cloves garlic, minced

1 small onion, finely chopped

1 cup fresh spinach (or kale)

1 teaspoon dried oregano

1 teaspoon smoked paprika

¼ teaspoon red pepper flakes (adjust according to spice preference)

Salt and pepper to taste

2 tablespoons nutritional yeast (optional, for a cheesy flavor)

Fresh parsley, chopped, for garnish

Lemon wedges for serving

Cook the pasta: In a large pot, fill it with salted water and bring it to a rolling boil. Once boiling, add your chosen pasta and cook according to the package instructions until al dente. Once done, reserve ½ cup of the pasta cooking water, then drain the rest thoroughly and set the pasta aside in a large bowl.

    Sauté the aromatics: In the same pot, heat the olive oil over medium heat. Add the finely chopped onion and sauté for about 3-4 minutes, or until it becomes translucent. Next, stir in the minced garlic and sauté for another 1-2 minutes until it becomes fragrant and golden.

      Add chickpeas and spices: Stir the drained chickpeas into the pot along with the dried oregano, smoked paprika, red pepper flakes, salt, and pepper. Cook this mixture for about 5-6 minutes, allowing the chickpeas to warm through and develop a slight crispy texture.

        Make the creamy sauce: Gradually pour in the almond milk, stirring constantly, and bring the entire mixture to a gentle simmer. Once simmering, reduce the heat to low and incorporate the nutritional yeast, if using. Allow it to simmer for another 3-4 minutes, which will help the sauce thicken slightly.

          Combine pasta and sauce: Carefully add the reserved pasta to the chickpea-sauce mixture. If you find the sauce is too thick, gradually add a bit of the reserved pasta water until you achieve your desired creamy consistency. Fold in the fresh spinach gently until it wilts and melds into the dish.

            Season and serve: Taste the pasta and adjust the seasoning with extra salt and pepper, if needed. Serve hot, beautifully garnished with chopped fresh parsley and accompanied by lemon wedges on the side for an extra burst of freshness.
