12 oz (340g) penne pasta

2 cups (480ml) Greek yogurt

1 cup (240ml) heavy cream

1 cup (100g) feta cheese, crumbled

1 cup (120g) cherry tomatoes, halved

1 cup (120g) spinach, fresh or frozen (thawed and drained)

1/2 cup (60g) kalamata olives, pitted and sliced

1 medium onion, chopped

3 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried dill

1/2 teaspoon red pepper flakes (optional, for a bit of heat)

1/2 teaspoon salt

1/2 teaspoon black pepper

1/2 cup (50g) mozzarella cheese, shredded (for topping)

2 tablespoons olive oil

Instructions
 

Preheat the Oven: Set your oven temperature to 375°F (190°C) to prepare for baking.

    Cook the Pasta: Bring a large pot of salted water to a rolling boil. Add the penne pasta and cook it according to the package instructions until it's al dente. Once done, drain the pasta and set it aside.

      Sauté the Vegetables: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes, until it becomes translucent. Next, stir in the minced garlic and cook for an additional minute until fragrant.

        Combine Ingredients: In a large mixing bowl, combine the cooked penne pasta with the sautéed onion and garlic. Add in the Greek yogurt, heavy cream, crumbled feta cheese, halved cherry tomatoes, spinach, sliced kalamata olives, dried oregano, dried dill, red pepper flakes (if using), salt, and black pepper. Gently mix all ingredients until fully combined.

          Transfer to Baking Dish: Grease a 9x13 inch (23x33 cm) baking dish and pour the creamy pasta mixture into it. Spread it out evenly to ensure even cooking.
