1 cup elbow macaroni

2 tablespoons unsalted butter

2 tablespoons all-purpose flour

1 cup whole milk

1 cup shredded sharp cheddar cheese

1/2 cup shredded mozzarella cheese

1/4 teaspoon garlic powder

1/4 teaspoon onion powder

Salt and pepper to taste

1/2 cup breadcrumbs (preferably panko for extra crunch)

Fresh parsley, chopped (for garnish)

Cook the Pasta: Bring a large pot of salted water to a rolling boil. Add the elbow macaroni and cook according to package instructions until al dente, usually about 7-8 minutes. Drain the pasta well and set aside.

    Make the Cheese Sauce: In the same pot, melt the unsalted butter over medium heat. Once fully melted, add the all-purpose flour and whisk continuously for about 1-2 minutes to form a roux. The mixture should turn light golden in color. Gradually pour in the whole milk while continuing to whisk to prevent any lumps. Cook, stirring frequently, for approximately 3-5 minutes until the sauce thickens to a creamy consistency.

      Add Cheese and Seasoning: Once your sauce has thickened, reduce the heat to low. Add the shredded sharp cheddar and mozzarella cheeses, stirring until completely melted and combined. Incorporate the garlic powder, onion powder, and season with salt and pepper to your taste.

        Combine Pasta and Sauce: Carefully fold the cooked elbow macaroni into the cheese sauce, ensuring each piece is evenly coated with the rich, creamy mixture.

          Prepare the Muffin Tin: Preheat your oven to 350°F (175°C). Lightly grease a standard muffin tin with cooking spray or a small amount of butter to prevent sticking.
