2 medium-sized beets, roasted and peeled

1 can (15 oz) chickpeas, drained and rinsed

1/4 cup tahini

2 tablespoons high-quality olive oil

1 teaspoon ground cumin

Salt, to taste

2-4 tablespoons water (to adjust consistency)

Roast the Beets: Preheat your oven to 400°F (200°C). Wrap each beet individually in aluminum foil and place them on a baking sheet. Roast in the oven for approximately 45 minutes to 1 hour. The beets are ready when a fork easily pierces through them. Once done, remove from the oven, let them cool slightly, then peel off the skins and chop the beets into chunks.

    Blend the Base: In a powerful food processor, combine the roasted beet chunks, drained chickpeas, tahini, olive oil, freshly squeezed lemon juice, minced garlic, ground cumin, and a generous pinch of salt.
