Ingredients

1 head of garlic

3 tablespoons olive oil

12 ounces fettuccine pasta

2 cups heavy cream

1 cup freshly grated Parmesan cheese

1 tablespoon unsalted butter

1 teaspoon Italian seasoning

Salt and freshly ground black pepper, to taste

Fresh parsley, chopped (for garnish)

Additional grated Parmesan cheese, for serving

Instructions

Roast the Garlic: Preheat your oven to 400°F (200°C). Slice off the top quarter of the head of garlic to reveal the cloves. Drizzle the exposed cloves generously with olive oil, then wrap the entire head in aluminum foil. Place it in the oven and roast for 30-35 minutes, or until the cloves are soft, golden, and fragrant. Once done, remove from the oven and let it cool for a few minutes before handling.

Cook the Fettuccine: In a large pot, bring salted water to a rolling boil. Add the fettuccine and cook according to the package instructions until al dente. Before draining, reserve approximately 1 cup of the pasta cooking water. Then, drain the fettuccine and set it aside in a large mixing bowl.

Prepare the Alfredo Sauce: In a large skillet set over medium heat, melt the butter until it begins to foam. Squeeze the roasted garlic cloves from their skins into the skillet, using the back of a spoon to mash them into a paste. Sauté the garlic for about 1 minute, allowing its aromas to develop.

Add Cream and Cheese: Gradually pour in the heavy cream, stirring continuously until it reaches a gentle simmer. Add the freshly grated Parmesan cheese and Italian seasoning, whisking until the cheese melts and the sauce thickens, about 3-5 minutes. If the sauce becomes too thick, incorporate a splash of the reserved pasta water to adjust the consistency to your liking.

Combine Pasta and Sauce: Add the cooked fettuccine directly into the skillet with the Alfredo sauce. Toss gently to coat the pasta thoroughly in the creamy mixture. Taste and season with salt and freshly ground black pepper as needed.

Serve: Transfer the creamy roasted garlic Alfredo pasta to serving plates. Garnish each dish with a sprinkle of fresh parsley and additional grated Parmesan cheese for a sophisticated touch.

Enjoy! Serve the pasta hot, and relish the delicious creamy and garlicky flavors with each savory bite!
