Ingredients

12 oz pasta (fusilli or penne recommended)

1 tablespoon olive oil

3 cloves garlic, minced

1 medium onion, diced

1 can (14 oz) artichoke hearts, drained and roughly chopped

5 oz fresh spinach, chopped (or 1 cup frozen spinach, thawed and drained)

1 cup heavy cream

1 cup cream cheese, softened

1 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon red pepper flakes (optional for heat)

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions

Cook the Pasta: Begin by bringing a large pot of salted water to a rolling boil. Once boiling, add your chosen pasta and cook according to the package instructions until al dente. Before draining, reserve 1 cup of the pasta cooking water to adjust the sauce later. Drain the pasta and set it aside.

Sauté Aromatics: In a large skillet set over medium heat, pour in the olive oil. After a minute, add the minced garlic and diced onion. Sauté the mixture for about 3-4 minutes, stirring occasionally, until the onions become translucent and fragrant.

Add Artichokes and Spinach: Toss in the chopped artichoke hearts and fresh spinach to the skillet. If you're using frozen spinach, add it now as well. Cook the mixture for an additional 3-4 minutes, stirring occasionally, until the spinach wilts and the ingredients are well blended.

Make the Cream Sauce: Lower the heat to medium-low before adding the heavy cream and softened cream cheese to the skillet. Stir continuously until the cream cheese has completely melted, and the mixture becomes creamy and well combined.

Incorporate Cheese and Seasonings: Gradually add the grated Parmesan cheese, garlic powder, onion powder, and red pepper flakes (if you like a bit of spice). Mix everything until the cheese is melted and the sauce thickens slightly. If the sauce seems too thick, incorporate some of the reserved pasta water a little at a time until you achieve your desired creamy consistency. Season the sauce with salt and pepper to taste.

Combine Pasta with Sauce: Introduce the cooked pasta to the skillet, tossing thoroughly to ensure every noodle is coated in the luscious creamy sauce. Allow the pasta to warm in the sauce for 2-3 minutes over low heat, stirring occasionally.

Serve: Remove the skillet from heat. Plate your creamy spinach artichoke pasta in individual bowls, garnishing each serving with freshly chopped parsley for a burst of color. Enjoy your comforting dish while it's hot!
