2 ripe avocados, halved and pitted

1 large cucumber, peeled and finely diced

1 cup plain Greek yogurt

2 cups cold vegetable broth

1 tablespoon fresh lime juice

1 garlic clove, minced

½ teaspoon ground cumin

Salt and black pepper to taste

¼ cup fresh cilantro, chopped (for garnish)

1 tablespoon extra-virgin olive oil (for drizzling)

Prepare Ingredients: Begin by halving and pitting the avocados, and then peel and finely dice the cucumber. Set both ingredients aside while you prepare the other components.

    Blend Base: In a blender, add the ripe avocados, diced cucumber, plain Greek yogurt, cold vegetable broth, lime juice, minced garlic, cumin powder, and a pinch of salt and pepper.

      Blend Until Smooth: Blend the mixture on high speed until it becomes completely smooth and creamy. Ensure there are no lumps remaining. If the texture is thicker than desired, feel free to add more vegetable broth in small increments until you reach the perfect consistency.
