Ingredients

4 boneless, skinless chicken breasts

1 cup sun-dried tomatoes in oil, drained and chopped

1 cup heavy cream

1 cup chicken broth

1 cup fresh basil leaves, roughly chopped

3 cloves garlic, minced

1 cup freshly grated Parmesan cheese

2 tablespoons olive oil

Salt and pepper to taste

1 teaspoon Italian seasoning

Additional fresh basil leaves for garnish

Instructions

Prepare the Chicken: Season both sides of each chicken breast generously with salt, pepper, and Italian seasoning. Make sure the seasoning is evenly distributed for optimal flavor.

Sear the Chicken: In a large skillet, heat the olive oil over medium-high heat. Once the oil shimmers, carefully add the seasoned chicken breasts. Cook for approximately 6-7 minutes on each side or until the chicken is golden brown and reaches an internal temperature of 165°F (75°C). After cooking, remove the chicken from the skillet and place it on a plate to rest.

Sauté the Garlic: In the same skillet, add the minced garlic. Sauté for about 30 seconds, stirring frequently, until the garlic is fragrant but not browned. Be sure to scrape up any flavorful browned bits from the bottom of the pan to enhance the sauce.

Make the Sauce: Stir in the chopped sun-dried tomatoes and mix well. Pour the chicken broth into the skillet, bringing the mixture to a gentle simmer. Allow it to cook for 2-3 minutes to let the flavors meld.

Add the Cream: Lower the heat to medium-low and gradually stir in the heavy cream and grated Parmesan cheese. Mix until the cheese has melted and the sauce is creamy. Let it simmer for an additional 3-4 minutes, stirring occasionally, until the sauce thickens slightly.

Combine: Return the seared chicken breasts to the skillet, nestling them in the creamy sauce. Add the chopped fresh basil and gently stir to incorporate. Allow the dish to simmer for another 2-3 minutes, letting the chicken absorb the delicious flavors.

Serve: Carefully transfer the chicken to a serving platter, and generously spoon the creamy sun-dried tomato sauce over the top. Garnish with additional fresh basil leaves for a pop of color. This dish pairs beautifully with pasta, rice, or crusty bread, perfect for soaking up the sumptuous sauce.
