8 oz (about 225g) pasta of your choice (penne or fusilli are excellent options)

2 tablespoons extra virgin olive oil

3 garlic cloves, finely minced

1 can (14 oz) diced tomatoes, including their juices

1 cup (240ml) heavy cream or substitute with coconut cream for a lighter alternative

3 cups fresh baby spinach, roughly chopped

1 teaspoon dried basil

1 teaspoon dried oregano

Sea salt and freshly ground black pepper, to taste

½ cup grated Parmesan cheese, plus extra for serving

Red pepper flakes for added spice (optional)

Fresh basil leaves, for garnish

Cook the Pasta: Fill a large pot with water, add a generous amount of salt, and bring it to a boil. Add the pasta and cook it according to the package instructions until al dente. Reserve ½ cup of the starchy pasta cooking water, then drain the pasta in a colander and set aside.

    Sauté the Garlic: In a large skillet, heat the olive oil over medium heat. Once hot, add the minced garlic and sauté for about 1 minute, stirring continuously until it becomes fragrant but avoid browning the garlic.

      Add Tomatoes and Cream: Pour the diced tomatoes along with their juices into the skillet and bring the mixture to a gentle simmer. Stir in the heavy cream, mixing well, and let it cook for about 2-3 minutes to thicken slightly.
