4 large bell peppers (choose red, yellow, or green)

1 lb ground turkey

1 cup cooked quinoa (or rice, your preference)

1 small onion, finely diced

2 cloves garlic, minced

1 cup cream cheese, softened to room temperature

1 can (15 oz) diced tomatoes, drained of excess liquid

1 cup shredded cheese (cheddar or mozzarella)

1 tsp Italian seasoning

1 tsp paprika

Salt and pepper, to taste

Fresh parsley or cilantro, chopped for garnish
