Crispy Air-Fryer Taco Rolls

1 lb ground beef or ground turkey

1 small onion, finely chopped

2 cloves garlic, minced

1 packet taco seasoning (or use homemade)

1 cup black beans, rinsed and drained

1 cup corn (fresh, canned, or frozen)

1 cup shredded cheddar cheese

1 cup cream cheese, softened

8 large flour tortillas

Cooking spray or olive oil

Fresh cilantro, chopped, for garnish

Salsa or guacamole, for serving (optional)

Instructions
 

Cook the Meat: In a large skillet set over medium heat, add the finely chopped onion and minced garlic. Sauté them together until they become fragrant and the onion turns translucent, about 3-5 minutes. Next, add the ground beef or turkey to the skillet. Cook, breaking it apart with a wooden spoon, until browned. Drain any excess fat if necessary.

    Add Seasoning and Other Ingredients: Sprinkle in the taco seasoning according to the package instructions (or use your own blend). Add the rinsed black beans and corn to the skillet, stirring everything together to combine. Cook for an additional 2-3 minutes, allowing the mixture to heat through. Remove from heat and mix in the shredded cheddar cheese and softened cream cheese until they melt and form a creamy, cohesive filling.

      Prepare the Tortillas: Lay one flour tortilla flat on a clean surface. Spoon 2-3 tablespoons of the meat and cheese filling into the center of the tortilla. Fold the bottom of the tortilla up over the filling, then fold in the sides, and roll tightly to form a wrap. Repeat this step with the remaining tortillas and filling.

        Preheat the Air Fryer: Preheat your air fryer to 375°F (190°C) for about 5 minutes, ensuring it's hot enough to give the rolls a nice crisp.

          Air-Fry the Taco Rolls: Lightly spray or brush the outer side of each taco roll with cooking spray or olive oil, which will help them crisp up nicely. Place the rolls seam-side down in the air fryer basket, being careful not to overcrowd the basket (you may need to do this in batches). Air-fry for 8-10 minutes, flipping them halfway through the cooking time, until the taco rolls are golden brown and crispy.

            Serve: Once the taco rolls are crispy, carefully remove them from the air fryer and allow them to cool for about a minute. Serve hot, garnished with fresh cilantro, alongside your favorite salsa or guacamole for dipping.
