Crispy Bacon Cheddar Bites

1 lb (450g) thick-cut bacon

1 cup (100g) sharp cheddar cheese, shredded

1 cup (100g) cream cheese, softened to room temperature

1/4 cup (30g) green onions, finely chopped

1/2 tsp garlic powder

1/2 tsp onion powder

1/2 tsp freshly ground black pepper

1/2 cup (60g) panko breadcrumbs (for extra crunch)

1 tbsp olive oil (for drizzling)

Instructions
 

Preheat the Oven: Begin by preheating your oven to 400°F (200°C). Line a baking sheet with parchment paper, and lightly spray it with cooking spray to prevent sticking.

    Prepare the Bacon: Cut the thick-cut bacon into half strips. Heat a skillet over medium heat and cook the bacon pieces until they are halfway cooked—still flexible but beginning to crisp, about 5-7 minutes. Once done, transfer the bacon to a plate lined with paper towels to drain any excess grease.

      Create the Filling: In a medium mixing bowl, combine the shredded sharp cheddar cheese, softened cream cheese, finely chopped green onions, garlic powder, onion powder, and black pepper. Use a spatula or fork to mix until all ingredients are well integrated and form a creamy filling.

        Assemble the Bites: Take one half slice of the bacon and place approximately a teaspoon of the cheese filling at one end. Carefully roll the bacon around the filling, tucking it in tightly. If necessary, secure the roll with a toothpick to keep everything in place.

          Coat with Breadcrumbs: On a plate, spread out the panko breadcrumbs. Roll each of the bacon-wrapped cheese bites in the breadcrumbs until they are fully coated. For an extra crunchy finish, press gently to ensure the breadcrumbs stick well.
