4 slices of freshly baked sourdough bread

4 slices of sharp cheddar cheese

4 slices of crispy bacon

2 large eggs

2 tablespoons unsalted butter, softened

Sea salt and freshly ground black pepper, to taste

Cook the Bacon: Heat a skillet over medium heat. Add the bacon slices to the skillet and cook until they are crispy and golden, about 5-7 minutes. Once cooked, transfer the bacon to a plate lined with paper towels to drain excess grease.

    Fry the Eggs: In the same skillet, with the bacon fat still in it, crack the eggs gently into the pan. Season the eggs generously with sea salt and freshly ground black pepper. Cook them sunny-side up for about 3-4 minutes, or until the whites are set but the yolks remain runny. Remove the skillet from heat and set the eggs aside.

      Assemble the Sandwiches: Take two slices of sourdough bread and spread a tablespoon of softened butter evenly on one side of each slice. On the unbuttered side, start layering: place two slices of sharp cheddar cheese on each slice, followed by two pieces of crispy bacon and one fried egg. Top the egg with another slice of cheddar cheese and cover with the second piece of sourdough, ensuring the buttered sides are facing out.
