1 block (200g) of feta cheese

1 cup panko breadcrumbs

1/2 cup grated Parmesan cheese

1 teaspoon dried oregano

1 teaspoon garlic powder

Freshly ground black pepper, to taste

1/4 cup all-purpose flour

2 large eggs

1 tablespoon olive oil, plus extra for drizzling

Fresh parsley, finely chopped, for garnish

Preheat the Oven: Begin by preheating your oven to 400°F (200°C). Prepare a baking sheet by lining it with parchment paper for easy cleanup.

    Prepare the Feta: Drain the block of feta cheese thoroughly. To remove any excess moisture, gently press it between paper towels. Once dried, slice the feta into cubes, aiming for approximately 1-inch pieces.

      Make the Breading Mixture: In a mixing bowl, combine the panko breadcrumbs, grated Parmesan cheese, dried oregano, garlic powder, red pepper flakes (if using), lemon zest, and a pinch of freshly ground black pepper. Stir well until all ingredients are evenly mixed.
