Ingredients

2 cups cooked shredded chicken (about 1 large chicken breast)

1 cup shredded cheese (choose between sharp cheddar or creamy Monterey Jack)

1/2 cup cream cheese, softened to room temperature

1/2 cup canned black beans, rinsed and drained

1/4 cup fresh cilantro, finely chopped

1 teaspoon ground cumin

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and black pepper, to taste

12 small corn tortillas

Vegetable oil, for frying

Optional toppings: guacamole, salsa, sour cream, lime wedges

Instructions

Prepare the Filling: In a large mixing bowl, combine the shredded chicken, cheese, softened cream cheese, black beans, chopped cilantro, ground cumin, garlic powder, onion powder, and a pinch of salt and pepper. Mix thoroughly with a spatula or spoon until all components are well blended into a cohesive filling.

Heat the Tortillas: In a dry skillet over medium heat, warm each corn tortilla individually for about 30 seconds on each side, or until they become soft and pliable. This step is crucial to prevent cracking while rolling them.

Fill the Tortillas: Take a warmed tortilla and place approximately 2-3 tablespoons of the chicken and cheese mixture in the center. Carefully roll the tortilla tightly, ensuring the sides are folded in to keep the filling secure. Position each rolled taquito seam-side down on a plate to hold their shape.

Heat the Oil: In a large, deep skillet or frying pan, pour in about 1 inch of vegetable oil. Heat the oil over medium-high heat until it reaches a temperature of 350°F (175°C). Use a cooking thermometer to check the temperature for precision.

Fry the Taquitos: Working in batches, gently place the rolled taquitos seam-side down into the hot oil. Fry the taquitos for approximately 3-4 minutes on each side, or until they turn golden brown and develop a crispy exterior. Use tongs to turn them carefully, ensuring even cooking.

Drain the Taquitos: Once they are adequately fried, remove the taquitos from the oil and transfer them onto a plate lined with paper towels. This will help soak up any excess oil for a lighter finish.

Serve: Serve the crispy taquitos hot and fresh from the fryer. Accompany them with your choice of optional toppings like creamy guacamole, zesty salsa, rich sour cream, and fresh lime wedges for a delightful flavor explosion.
